They are unrelated to black peppercorns because of their citrus flavor. Their husks are used in flavoring in lieu of their seeds, for the latter has a grainy, sand-like flavor. Lightly toasted Szechuan peppercorns can be soaked in ginger oil to create an oil that can be used in noodles and stir-fry. These peppercorns are commonly used in Thai, Chinese, and Japanese cuisines.
